Fresh raw spinach, washed

Light soy sauce

Cider vinegar

Black pepper

Sesame seed oil
1/2 ts
Hot pepper oil or Tabasco
-sauce
3/4 lb
Tofu (soybean cake), cut
-into small dice
3 tb
Cornstarch, dissolved in 5
-tablespoons of water
1
Egg, beaten
3 tb
Finely chopped cilantro
2
Green onions, finely chopped
Directions
Combine the chicken broth, mushrooms and spinach in a soup pot.
Add the tofu and the cornstarch, stirring constantly until thickened.
