Cooking Recipe Pear Avocado Mousse

Very ripe avocado, peeled,
-seeded and chopped

Lemon juice
2 tb
Grated orange rind
2 tb
Spiced or plain dark rum

Chopped peanuts or macadamia

Directions
mint sprigs for garnish
Combine all ingredients in a blender or food processor and puree for
approximately 1 minute. Pour the pureed mixture into a glass dessert
dish or parfait glasses and chill in the refrigerator for at least an
hour. Garnish with mint sprigs and serve cold.
